Yummy Gazpacho Soup

Gazpacho Soup recipe


Ingredients

  • 6 cups chopped tomatoes (4–5 medium tomatoes)
  • 2 cups chopped peeled cucumber
  • 1 cup chopped red onion (1/4 red onion)
  • 1/3 cup chopped fresh parsley
  • 1/3 cup chopped fresh basil
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grape tomatoes, quartered 
  • Add the 6 cups of tomatoes, 
  • 1 1/2 cup cucumber, 
  • 3/4 cup red onion, 
  • 1/4 cup parsley, 
  • 1/4 cup basil, 
  • lemon juice 
  • olive oil
  • salt and pepper

Directions
Combine all ingredients, puree if you like it smooth, and chill for at least 1 hour before serving.
