KETO HAZELNUT TARTS & CHOCOLATE MOUSSE

INGREDIENTS:

  • 200g hazelnut meal
  • 50g Ghee
  • 50g Coconut Oil
  • 30g erythritol
  • 1/2 Tbsp cinnamon
  • 1 egg
  • 2 cups heavy cream
  • 50g powdered erythritol
  • 50g chocolate 90%, melted
  • 100g mascarpone

INSTRUCTIONS:

  1. Tarts: Preheat oven to 350F.
  2. Mix hazelnut meal, ghee, erythritol & cinnamon with a hand mixer. Mix in one egg. Divide the dough evenly between all the previously greased tart tins (I had six).
  3. Press the dough, then make holes with a fork. Bake for 15 minutes.
  4. Remove from oven, and cool for about half hour. DO NOT attempt to take them out of the tins before they have cooled down.

MOUSSE:

  1. Beat heavy cream until stiff peaks.
  2. Add powdered erythritol, melted chocolate and mix until uniform.
  3. At the end, beat in mascarpone. Fill the tarts and refrigerate for an hour.
