KETO  FLAXSEED PANCAKES WITH STRAWBERRIES AND CREAM 
FLAXSEED PANCAKES WITH STRAWBERRIES AND CREAM
An excellent way to get in extra fiber is through Flaxseeds, and these Flaxmeal Pancakes with Strawberries and Cream is a delicious way to do just that. The best part, they are only 2g of net carbs per pancake!

INGREDIENTS
  • 1/2 cup flaxseed meal
  • 1/2 cup almond flour
  • 3 eggs
  • 1/4 cup unsweetened coconut milk
  • 3/4 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • pinch of salt
  • Coconut oil

FOR THE STRAWBERRIES AND CREAM:
  • 1/2 cup of strawberries
  • 1/2 cup coconut cream
  • 1 tsp vanilla extract

INSTRUCTIONS
  • Mix all the dry ingredients in a bowl. Set aside.
  • Mix all the wet ingredients in a separate bowl.
  • Combine the wet ingredients to the dry ingredients. If the batter is too thick, add more coconut milk.
  • Heat coconut oil in a small skillet.
  • Pour about 1/4 cup of the batter to the skillet and cook for 2-3 minutes per side.


FOR THE STRAWBERRIES AND CREAM
  • Chop up the strawberries in small pieces.
  • Add to a saucepan and cook for 3 minutes.
  • Add in coconut cream and vanilla. Combine until it becomes like syrup.
  • Top the pancakes with 1-2 tbsp of Strawberries and cream.
